Cooking with Chestnuts… The Italian Way, will be led by renowned Chef Vincenzo Velletri.

Vincenzo is based in Perth and is recognised as a leading “guru” on Italian cooking…the slow way.  You will learn…

  • How to prepare chestnuts
  • Methods of cooking the Italian way
  • Enjoy an Italian eating experience
  • Get involved in an Italian Cooking experience

The Menu

Appetizer:

1-      Bocconcini di castagne (bite of chestnuts rolled with chestnuts pork pancetta or bacon, roasted in the oven)

2-      Frittelle di castagne (dumpling made with chestnut flour and deep fried)

 Entrée :

1-      Tagliatelle made with chestnuts flour and served with mushroom ragout

Main:

1-      Chestnuts and chestnut fed pork stufato with Manjimup potatoes and fennel seeds

Dessert:

1-      Chestnut mousse

To finish with chestnuts roasted on the open fire.
